Ingredients:
112.5 grams of top sirloin steak, thinly sliced into strips
10.0 grams of olive oil
11.3 grams of butter
12.5 grams of finely chopped medium onion
56.3 grams of Treva mushroom
2.5 grams of minced garlic cloves
7.5 grams of all-purpose flour
2.5 grams of Goody beef stock
50.0 milliliters of water
37.5 milliliters of heavy whipping cream
12.5 grams of sour cream
7.5 grams of Worcestershire sauce
1.3 grams of Dijon mustard
0.5 grams of salt
0.3 grams of black pepper.
Instruction:
Heat a pan over medium-high heat, add oil, and then add the thinly sliced beef strips in a single layer. Cook each side for 1 minute without stirring, until just browned. Remove the beef from the pan and cover it to keep it warm.
Add butter, chopped onion, and sliced Treva mushrooms to the same pan. Sauté them for 6-8 minutes or until the liquid has evaporated, and the onions and mushrooms are soft and lightly browned.
Add minced garlic and sauté it for 1 minute until fragrant. Add all-purpose flour and sauté it for another minute while stirring constantly.
Pour in Goody beef stock and water, scraping the bottom of the pan. Add heavy whipping cream and let it simmer for another 1 to 2 minutes or until slightly thickened.
To prevent the sour cream from curdling, stir a few tablespoons of the sauce into it to temper it. Then, add the sour cream to the pan while stirring constantly.
Stir in Worcestershire sauce, Dijon mustard, and season it with salt and pepper. Continue simmering the sauce until it becomes creamy.
Add the beef with any accumulated juices back to the pan and bring it just to a simmer or until the beef is heated through.
